"These patties are a recipe handed down from the Italian grandmothers in my family. They made this as a side with pasta but I love them on thier own as a light lunch."

  1. Dethaw spinach in the micro and squeeze out excess water. Mix egg, bread crumbs, salt, pepper, garlic to combine. Spray large skillet with Pam, and let heat to med and add olive oil. Form the spinach into small patties-(it is normal for them to seem a little flimsy-they will get thier shape as they cook). Brown on one side for 3-4 min, and flip over carefully. Continue to cook until both sides are a golden brown. Top with parmesan and serve immediately, or keep warm under foil. They also freeze great and can be reheated in the microwave.
