Mom's Chicken


"This is a great dish my mom made for us, and now I make for my kids. One pot add a salad and you're done. You can omit the carrots if you don't like them "fried". Please note, this recipe is best in an electric fry pan."

  1. Melt butter or margarine in fry pan. Add chicken breasts, and cook at medium heat for 5 minutes while you prepare veggies.
  2. Peel potatoes and cut in half.
  3. Peel carrots and cut into large pieces.
  4. Turn chicken pieces over and add potatoes and carrots to fry pan.
  5. Sprinkle all with garlic powder, paprika, salt and pepper to taste.
  6. Cover and cook for 35 to 45 minutes, on med/high or until potatoes are tender, and chicken is cooked through.
  7. You will want to stir occasionally to prevent burning, but potatoes and chicken should have "crispy spots".
