"This is a very easy, rich crustless quiche that can also be served as an appetizer by cutting into smaller squares. Good warm or at room temperature. It's wonderful with rolls and fresh fruit for dinner or you can cut into 60 squares and serve and an appetizer."
Preheat oven to 400. Place butter in a pan and place in warm oven until just melted, about 3 minutes. Beat eggs in a large bowl. Mix in flour, baking powder and salt. Squeeze thawed spinach until very dry and add to egg mixture, along with melted butter and all other ingredients. Stir until well blended.
Pour mixture into pan and bake for 15 minutes. Reduce heat to 350 and bake an additional 35 to 40 minutes. Remove from oven and let sit for 5 minutes to set.
