  1. 1. Bring pan of water to a boil, cook cubed Zucchini for 3 minutes, no longer, drain. Set aside.
  2. 2. Preheat oven to 350, grease 9x13 pan
  3. 3. Grate Carrots course, dice Onion fine, add soup, melted margerine, sour cream.
  4. 4. Add stuffing, fold in Zucchini (careful not to mash Zucchini)
  5. 5. Sprinkle with buttered cracker crumbs
  6. 6. Bake at 350 for 30 minutes
