Roasted Pecan Turtles

  1. Caramel:
  2. Melt butter in heavy pan
  3. Stir in brown sugar and salt and mix well
  4. Stir in corn syrup and mix well
  5. Gradually add condensed milk, stirring constantly
  6. Cook and stir over medium heat 12-15 minutes (245°)
  7. Remove from heat
  8. Stir in vanilla
  9. Pour into butter greased 9 x 13 pan
  10. Cool and cut into squares
  11. Chocolate Covering:
  12. Melt together in a double broiler until smooth.
  13. If melting in a microwave be sure not to overcook
  14. Pecans:
  15. Add pecan halves to a microwave safe dish
  16. Add butter on top of pecans
  17. Microwave 1 minute add a sprinkle of salt and stir.
  18. Microwave 1 minute at a time adding a sprinkle of salt and stirring after each until the pecans have a salted to taste, roasted flavor.
  19. Pour out over paper towels to drain excess butter.
  20. Assembly:
  21. On aluminum foil arrange 5 pecans to represent 4 legs and the head of a turtle.
  22. Press enough caramel into the center to hold all pecans in place.
  23. Cover with the caramel with melted chocolate, letting it drip down on the sides.
  24. Cool in refrigerator until firm enough to move without bending.
