Pork Tenderloin w/Caramelized Onions

  1. 1. Slice pork tenderloin into 1 inch thick pieces.
  2. 2. Dip pork pieces in egg and coat with bread crumbs.
  3. 3. Fry pork pieces in olive oil until nicely browned (about 5 minutes per side) If using an electric frying pan, fry at 375 degrees)
  4. 4. Slice large onion into 1/2 inch rings, keeping rings in tact.
  5. 5. Place the onion rings underneath the pork pieces in the frying pan and add white wine, chicken broth, & lemon juice.
  6. 6. Sprinkle pork & onions with capers.
  7. 7. Bring to a boil and reduce heat to 250 degrees and let cook for 30 minutes. More liquid can be added during the steaming process. You most likely won't need it, but just in case.
  8. 8. Serve the pork slices over the onion rings. The taste is hard to describe, but it's very good!
