  1. 1. Boil the sweet potatoes for approximately 30 mintues (until cooked and soft). Peel skins from cooked sweet potatoes and slice.
  2. 2. Combine the cornstarch, brown & white sugar, butter and salt in a saucepan.
  3. 3. Add orange juice, pineapple and rind.
  4. 4. Heat until thickened and pour over sweet potatoes.
