Preheat oven to 375 F. Arrange bread slices on large baking sheet. Brush bread with the extra virgin olive oil (2 Tbls). Bake until bread is toasted and golden brown, about 10 minutes. Rub toasts with the peeled clove of garlic.
Mix tomatoes, basil, garlic and remaining 3 Tbsp. oil in bowl. Season with salt and pepper to taste. Spoon topping on each toast. Arrange on platter and serve. Can be made a day in advance. If it's too much garlic, you can either omit it from the tomato mixture or the toasts.
The tomato mixture is also good tossed with pasta.
