Blend together sugar, oil and eggs; beat until slightly thickened. Combine all dry ingredients; add to egg mixture. Add carrot, apple, raisins and nuts; blend. Pour into a greased 9x13 pan. Bake at 350 F for 35-40 minutes. When cool, frost with Cream Cheese Frosting. Beat softened cream cheese and margarine. Add icing sugar and vanilla. Frost cooled Lunchbox Carrot Cake. Makes 16 generous servings.
