  1. Steam carrots until soft.
  2. Puree them in a food processor.
  3. Add eggs and egg white one at a time and process.
  4. Add remaining ingredients and blend well.
  5. Pour into a souffle or casserole dish.
  6. Ina seperate bowl, Mix all topping ingredients except butter with a fork. Add melted butter and mix with fork.
  7. Spread topping over casserole and bake at 350 for 35-40 minutes or until set.
