  1. Preheat oven to 425 degrees. Coat 2 9” pie pans with nonstick cooking spray. Coat a large frying pan with nonstick cooking spray, place over medium heat. Add apple slices & cook, stirring & tossing every 2 – 3 minutes, until slightly softened & browned in spots, about 10 minutes. Add honey or syrup, cinnamon & nutmeg. Continue cooking, stirring frequently, until apples are tender & honey coats them in a syrupy glaze, about 5 minutes. In medium bowl, beat eggs, egg whites, milk, oil, vanilla, & orange zest until blended. Add flour; beat until completely smooth. Divide batter evenly between prepared pans. Top each with equal amount of apple mixture. Bake until golden brown & puffed, about 20 minutes. Remove from oven, dust with confectioners sugar.
