"I developed this recipe as a way to eat a variety of vegetables that was healthy and different. It also was a good way to get my husband to eat more vegetables! (He loves this recipe). The longer you let this marinate, the better it tastes! Other vegetables are easily substituted in this recipe."
Clean all vegetables and remove seeds. Chop vegetables and place in bowl. Toss to mix. Combine vinegars, oil, garlic, ginger, dill, allspice and onion powder. Stir well. Pour over vegetables and stir. Cover and let marinate in the refrigerator for at least 30 mintues before serving. Right before serving mix well as the liquid will settle to bottom of bowl.
