  1. Preheat oven to 500 degree F .
  2. Slice eggplants lengthwise into 8 slices , approximately 1/2 inch in thickness .
  3. Season eggplant with salt and pepper to taste .
  4. Place eggplant slices on a baking sheet , lightly coated with olive oil .
  5. Bake egg plant until soft and brown .
  6. Remove baking sheet from the oven and sprinkle the 8 eggplant slices generously with parmesan cheese .
  7. Place one slice of cappacola or deli style ham on each of the 8 slices of eggplant .
  8. Lower oven temperature to 350 degrees and return eggplant to the oven .
  9. When parmesan cheese melts , remove from the oven .
  10. Garnish four eggplant slices with the shredded lettuce , sliced tomatoes and sliced onions { vegetables optional }.
  11. Cover each of the four eggplant slices with the remaining four slices .
