Wild Rice and Chicken Salad with Mandarin Oranges

"This salad is equally good served warm or cold. I prefer it cold though, which adds to the preparation time. Chicken can be grilled then cubed into the wild rice before serving. Spinach leaves can be substituted for the lettuce, if you prefer."

  1. Grill chicken breast till juices run clear.
  2. Drain Mandarin Oranges(reserving juice)
  3. Mix juice and water to equal 2 cups liquid.
  4. Simmer rice using this liquid.
  5. When rice is done:
  6. Add Mandarin Oranges, gently mixing as to not break up the segments.
  7. Slice chicken breast to equal 4 portions,line dishes with greens, top with wild rice and Orange mixture, sprinkle with toasted and slivered Almonds.
  8. Serve with Poppy Seed dressing.
