  1. saute onion, garlic, and ginger in oil in 10 inch skillet until golden. Add carrots and broccoli with soy sauce, saute 10 minutes. Add peppers, cook 5 minutes. Add mushrooms and tofu. Cook until all vegetables are tender and tofu is browned. Sprinkle with salt and pepper. Add more soy sauce for taste if desired.
