  1. Directions:
  2. 1. Heat oil and add onion, garlic and capsicum. Cook stirring until softened.
  3. 2. Add mushrooms, crushed tomatoes, sugar, tomato paste, water and stock.
  4. 3. Bring to the boil, simmer uncovered for 30 minutes.
  5. 4. Beat cream cheese and cottage cheese with electric mixer until smooth.
  6. Assembly
  7. 1. Place a layer of tomato mixture in the bottom of greased lasagna dish and cover with spinach leaves.
  8. 2. Cover with 1/3 of cheese mixture. Then lasagna sheet. Continue until all mixture used ending with tomato sauce.
  9. 3. Bake covered in foil in a moderate oven for 45 minutes. Take out of the oven and cover with grated cheese and bake for a further 10-15 minutes uncovered.
  10. 4. Cut into wedges to serve.
