  1. Preheat oven to 350 degrees. Prepare pie crust in 9" pie dish.
  2. In blender put tofu and milk. Blend until smooth. If you have to add a little more milk to make it run smoothly, use your own discretion. Add salt and pepper. (If you're adding the 2 eggs, do it now).
  3. In a medium bowl, put the drained spinach, garlic, onion and cheeses. Add the tofu mixture. You may have to scrape the blender (or food processor) with a spatula to get it all off the sides. You really need all that tofu mixture.
  4. Mix well and pour into the pie dish. Bake for about 30 min. in oven. Check after 25 min...depending on your oven.
  5. Let cool for 5 minutes...cut and enjoy!!
  6. *I did find that sometimes I needed to add more salt to taste, so if 1/2 teas. isn't enough, add more.
