Easy Tortilla Soup


"This recipe is similar to one at a local restuarant chain. The soup is different than traditional tortilla soups but it is wonderful. The tortilla strips are what I love best about this soup but they can be replaced by tortilla chips to save time."

  1. Cook chicken breasts adding diced green chiles when chicken is almost cooked thoroughly. Slice tortillas into pencil thin strips. Heat enough oil to deep fry tortilla strips on medium high heat. Cook tortilla strips for 1-2 mins or until lightly browned. Remove and drain excess oil from strips. Cut chicken into small bite size pieces. Heat fiesta nacho cheese and cream of chicken soups together in a pot over medium heat. Also, add milk and stir until creamy for about 10 mins. Add chicken, enchilada sauce, and cheddar cheese. Stir until combined and heated through, make sure to stir well because the enchilada sauce can burn the bottom of the pot. Serve topped with tortilla strips and cheddar cheese.
