  1. To make pastry
  2. place flour, butter,icing sugar in food processor, process till is resembles bread crumbs.
  3. Add egg yolk and water and process until forms a dough. Mold into 2 flat shapes and chill for 20 min { this recipe makes two serves of dough. freeze remaining for another time}
  4. Roll out pastry to 3mm and line 24 cm flan tin (patch any cracks with extra pastry)and freeze for 20 min.
  5. line pastry with foil, fill the foil with a little rice and bake @ 180c for 15 min remove foil and rice and return to oven until ligth golden.
  6. To make filling.
  7. combine all ingredients (dont beat)
  8. strain
  9. Place flan tin on a baking tray carefully pour lemmon mixture in
  10. bake @ 180c for 20 min. the filling will be runny in the centre and will set when cool, dont over cook or cracks will appear.
  11. cool and and sprinle with icin sugar.
