Just The Berries Oatmeal-Toffee Cookies

"These are so good and chewy-leave them on the cookie sheet for a minute or two and they will be just right. If you like a crisper & crunchier cookie-immediately remove them from the cookie sheet, once they are done baking. They are full of berries, chocolate, oatmeal and toffee."

  1. Heat oven to 350°.
  2. Sift together the flour and baking
  3. soda and set aside.
  4. In an electric mixer, using a paddle
  5. attachment, cream the butter and
  6. sugars on medium high speed until
  7. light and fluffy, about 2 to 3
  8. minutes.Scrape down the sides of the
  9. bowl once or twice during the mixing.
  10. Add egg; mix on high speed to combine.
  11. Add vanilla extract; mix to combine.
  12. Scrape down the sides of the bowl.
  13. Add the sifted flour in additions on a
  14. low speed until well combined. On low
  15. speed, add the oatmeal, cherries,
  16. chocolate and toffee pieces and mix to
  17. combine.
  18. Divide the dough into 3 equal portions
  19. and wrap, approximately 1 1/2 inches
  20. in diameter. Dough can be frozen,
  21. chilled in the refrigerator for 1 to 2
  22. days or baked immediately. Cut logs
  23. into 3/4 inch pieces. Bake on
  24. parchment-lined baking sheets, until
  25. golden brown, 8 to 10 minutes. (it was
  26. more like 12 to 14 minutes for my
  27. oven)
  28. Remove from the oven and transfer to a
  29. baking rack to cool.
