Lemon Baked Chicken


"Over the years I have worked with this recipe to perfect it and I think that I have finally accomplished it. It can be made with the skin or without. But I like the flavor you get when cooking with the skin. Also, the skin can be removed after you have finished cooking the chicken. Hope that you enjoy it!"

  1. Rinse and pat dry chicken pieces. Set aside.
  2. In 9x13 baking pan add all ingredients except butter, lemon juice,
  3. and paprika. Nestle chicken pieces into ingredients. Pour melted butter and lemon juice over chicken that is skin side up. Sprinkle with paprika, salt, and pepper.
  4. Cover with foil and bake in a 425 degree oven for 30 minutes.
  5. Take out of oven, remove foil, and baste with juices. Put back in oven for 30 minutes leaving foil off. Baste about every 10 minutes til golden brown and liquid has just about evaporated.
