Yummy Bacon and Cheddar Waffles

  1. Preheat waffle iron to medium high.
  2. Whisk flour, sugar, baking powder and salt together in a bowl and set aside.
  3. In a separate bowl, whisk egg yolks, milk and oil together. Add flour mixture and stir until just combined. Stir in bacon and cheddar, being careful not to over-mix.
  4. Beat egg whites in a small bowl until stiff but not dry. Fold whites into batter.
  5. Spoon 1/2 cup batter into waffle iron. Close and cook until golden and crisp, about 5-6 minutes. Repeat with remaining batter.
  6. To serve, drizzle with maple syrup, or for a crunchy alternative, sprinkle with maple flakes.


These were yummy - and a break from the sweet waffles we normally eat - even though we did use maple syrup. I used 8 strips of bacon...and plenty of Pam because they stick! The batter will see...
