  1. In a med-large boiler, melt butter with olive oil over low heat.
  2. Cook onions on medium in butter-oil until soft & tender and light brown on the edges. Approx. 30-45 mins.
  3. Sprikle in the flour and stir. Pour in the beef broth, water, basil and soy sauce. Bring to a boil and reduce heat and simmer approx. 20 minutes.
  4. Heat Broiler and toast bread slices.
  5. Ladle soup into 6 oven safe bowls and place toasted bread on top of soup. Top bread with sliced swiss cheese.
  6. Place under broiler until cheese is melted.
