"Delicious Red Velvet Cake!!! Passed through many generations, this Red Velvet Cake has been a staple at EVERY James Gang get together. Thanksgiving, Christmas, or just because, we have to have this cake. Noone makes it quite like Granny, but it still taste pretty darn good!!"
Cream shortening, sugar, and eggs. Make paste with food coloring and cocoa; add to mixture. Add salt and flour with buttermilk, butter flavoring, and vanilla. Alternately add soda and vinegar. Do NOT beat hard, just blend. Pour into 2 greased and floured 9" round pans. Bake 30 minutes at 350 degrees. Layers may be split to make 4 instead of 2.
Cook flour and milk on low heat until thick. Cool. Cream sugar, shortening, and vanilla until fluffy; add to flour-milk mixture. Beat until mixture is like whipped cream. Spread on layers. Sprinkle with coconut and nuts if desired. Keep cake cool.
