  1. In a soup pot, add small amount of olive oil and cook sausage over medium heat until no pink remains.
  2. Add Onion and Chopped Garlic, cook until Onion is soft.
  3. Add Broth, Diced Carrot, Canned tomatoe(Drained), Basil and Pepper. Bring to Boil that reduce heat and simmer one hour.
  4. Cook 1/2 cup of rice. After one hour add the cooked rice and spinach to the stock and cook for 3-5 minutes or until spinach is soft. Serve immediately.
