Directions

  1. Saute veggies in olive oil until fragrant, about 5 minutes.
  2. Pour chicken broth over veggies until they are covred and simmer until potaotes are soft.
  3. Add butter and mash until veggies are desired size.
  4. Add salt and pepper to taste.
  5. Add milk or cream to desired thickness.
  6. Warm soup but do not boil.
  7. Top with cheese.
