Directions

  1. Saute onions in melted butter 1-2 minutes til soft.
  2. Add flour, stirring to coat onions well.
  3. Stir in broth and milk.
  4. Scoop out pulp from one potato, saving the skin.
  5. Add pulp to broth mix.
  6. Cook just to a boil.
  7. Dice up remaining potatoe(s) and skins, add to soup and heat throughly.
  8. Sprinkle w/cheese when serving if desired.
