  1. In a medium bowl, combine feta, cream cheese, garlic, onion, olive oil, pepper, lemon juice and thyme. Mix well with hands until smooth.
  2. Place a piece of heavy-duty plastic wrap on a flat surface and transfer the mix onto it lengthwise, to form a log. Wrap it, then role it into a 1 1/2 inch thick by 10 inch long log.
  3. Refrigerate for at least 2 hours. Unwrap, but keep the log on one end of the plastic wrap. Sprinkle almonds onto the plastic, and roll the log over the nuts to coat the outside of the log. Transfer the log onto a serving tray, cover and refrigerate until needed
