  1. Spray 8 cup casserole dish with cooking spray.
  2. Pulse sausage in food processor until coarsely ground.
  3. Squeeze excess water out of spinach.
  4. Add to food processor and pulse until blended, then set aside.
  5. Slice the polenta into 1/4" thick rounds.
  6. Arrange five rounds over bottom of casserole dish.
  7. Spread 1/2 cup of ricotta evenly over polenta.
  8. Spread half of the tomato sauce over ricotta, then scatter half the chicken mixture over that.
  9. Top with one cup mozzarella and another layer of polenta rounds.
  10. Repeat the layers, finishing with a layer of polenta.
  11. Sprinkle top with parmesan cheese.
  12. Cover with foil and bake at 450F oven for 25 minutes.
  13. Remove foil and bake additional 5 minutes.
