Oven-Baked Chicken Linguine

"This recipe was thrown together when I was craving baked pasta, but didn’t have spaghetti or ground beef. I then decided to try my hand at an oven-baked linguini dish with chicken instead. A combination of chicken, pasta, onion, tomatoes, garlic and herbs, and cheese make this comforting and quick oven-baked pasta."

  1. Preheat oven to 350 degrees.
  2. Cook the pasta as directed on package until just tender. Prepare remaining recipe in the meantime and drain pasta when it’s done.
  3. Cook diced chicken breasts, onion and garlic in the olive oil in a large frying pan on medium heat until the onion is tender and the chicken is no longer pink and the juices run clear.
  4. Add the diced tomatoes with their liquid and the herbs. Cook until most of the liquid has evaporated (5-10 min). Remove from heat.
  5. Add cooked linguine and ½ cup of the cheese to the mixture and toss well.
  6. Transfer pasta to an ungreased deep casserole dish. Top with remaining cheese.
  7. Bake for 20 minutes until bubbly.
