Irish Soda Bread

This dense, fine-crumbed bread is made of flour, buttermilk, baking soda, and salt. The leavener is baking soda, not yeast: the soda reacts with acid in buttermilk to form gas bubbles that make the bread rise. Once the dough is mixed and shaped, it goes in the oven immediately, so it's fast to make.


Something Sweet
Soda bread can be sweetened, if you like it sweet. But for a St. Patrick's Day dessert, bake a boiled fruit cake, fairy cakes, or tea cake.
