A different and delicious way to eat up all the zucchini that's overflowing from the garden. Diced zucchini are sauteed with garlic and red pepper flakes then simmered with cream, and served with Parmesan cheese and chopped parsley.

Potato salad with a Texas flair - I get many requests to bring this to picnics. Nice blend of potatoes, black beans, green onions, bacon, and jalapenos. Sometimes I sprinkle dried crushed red hot peppers over the top for color and taste.

A great mix of heat and sweet! Chicken skewers marinated and grilled to tender, juicy perfection. Enjoy with a peanut sauce, honey, or even plain!

Italian style stuffed bell peppers for the vegetarian (can easily be prepared vegan). Even my meat-eating husband loved these.

Just like a seasonal fruit pie - wonderful for people who have trouble making the perfect crust. My favorite is blackberries with peaches, but you can use pretty much any seasonal fruit that you love.

Each week we take a look at what home cooks are stirring up in different parts of the country. This week our eye is on New Hampshire.
  1. Apple Filled Chicken in Pecan Creme Sauce
  2. Summer Squash Pizza Crust
  3. Blueberry Crumb Pie
  4. Sweet and Spicy Green Beans
  5. Zucchini Herb Casserole

To plunge food (usually vegetables and fruits) into boiling water briefly, then into cold water to stop the cooking process. Blanching is used to firm the flesh, to loosen skins (as with peaches and tomatoes) and to heighten and set color and flavor (as with vegetables before freezing).
