I love baking with fresh pumpkin...best pies in the world. People think its a hard and time consuming task but it is soooo worth it!! The end product is pure delicious!!

I made the Downeast Maine Pumpkin Bread. This is the best recipe I have ever tried for Pumpkin Bread. It is one of those tried and true, real meal deal recipes .I did substitute buttermilk for the liquid. Yumm! This is a Keeper!

May I also suggest "Pumpkin Fluff Dip"? You can find it on here and its absolutely lovely when dipped with cinnamon cookies or Granny Smith apple slices.

The Pumpkin Chip Cupcakes from this site are amazing as well. I made them for a birthday deal at work and actually had people pay me to make more. (They said they would buy the ingredients and pay me for my labor so I took them up on the offer! I made a couple dozen.) Give them a try and you won't regret it. :-D

I always buy an extra pumpkin in October and make curried pumpkin. I am a curry fiend, and I like to eat it on Halloween as I'm handing out candy to the kiddies!

I love cooking with pumpkin. I always buy extra, especially when the go on sale, cook them and freeze them in one cup serving. For those who think fresh pumpkin is too difficult to work with, try this. Cut it in half, scoop the seeds and put it in pan with about an inch of water. Place the pan in the oven (or microwave if the pumpkin is small enough) and cook until the skin can be pierced with a fork. Let cool, then scoop. I puree mine immediately, but you don't have to. I find that this is easier than boiling because there is less water to have to try to drain.

November 1st one of the local grocery stores gives away all their extra field pumpkins and while field pumpkin isn't as tasty as pie pumpkin it's still free food. I've found the best way to cook it (especially if its been a rainy year) is hack it in half, scoop out the seeds, and roast it in the oven. It takes about an hour at 350 degrees. The most difficult thing is finding new recipes to use it in, cause I got 16 large pumpkins this year and I have a small freezer. This site is great, lots of ideas and I have made it through 10 already.

What is the difference between pumpking pie filling and pumpkin puree and how do I know when to use what? Help

Pumpkin puree is nothing but pumpkin, pumkin pie filling has the extra spices added in, some also add dehydrated eggs as well.

If something calls for canned pumpkin, can you substitute fresh pumpkin instead?

Does anyone have a pumpkin cheesecake recipe? I made it once and it was very tricky on the timing of the bars. You bake it in a jelly roll pan

pbloomer - here's my Mom's perfect Pumpkin Cookie recipe: ½ c shortening 1 ½ c sugar 1 egg 1 tsp. vanilla 1 cup pumpkin (not pie mix) 2 ½ c flour 1 tsp salt 1 tsp baking powder 1 tsp. baking soda 1 tsp. nutmeg 1 tsp. cinnamon ¼ tsp. cloves 1 12-oz. bag. Chocolate chips (optional) Beat shortening, sugar, egg, vanilla and pumpkin with electric mixer. Add dry ingredients and mix everything together well with a spoon.* Drop 1 inch apart on greased cookie sheet. Bake for 10 min at 375º.

I love baking and cooking with pumpkin! My fave is Pumpkin Dump Cake. There are a few versions on this site. Its great hot or cold and even better with whipped cream or ice cream of course!

I'm dying to find a pumpkin recipe that I once found in all the women magazines in the mid 1980's. I do not recall the name but it was similar to a mousse & had cool whip as an ingredient. Can anyone help?

Found some really yummy pumpkin recipes on an entire blog committed to making pumpkin specialties!!! I tried the Sour Cream Chocolate Chip Pumpkin Bread, and the beautiful Pumpkin Upside Down Cakes...DELICIOUS!!!! And the Pumpkin Croque Monsieur...OMG...to die for, and EASY!!!! i tried the downeast maine pumpkin bread...so easy to make. add the dry ingriendients to the wet....mix...and bake. it was so good i make it once a week...sometimes two at a time..for just two of us.

Pumpkin Puree and canned 100% pumpkin are the same thing. You do have to make sure that you don't accidently pick up the canned pumpkin pie mix. Like prior comments stated it already has the spices, sugar and other ingredients in it. The texture and color of canned pumpkin puree is just a little different than home-made pumpkin puree

Hello Everyone! I am looking for a recipe from years ago it was in my local paper, the recipe was called Blonde Brownies but it was a pumpkin, oatmeal brownie/bar then when they were done baking you poured a bag of chocolate chips on top to melt and spread over the brownies...they were to die for but the recipe is lost and I have been searching the internet for weeks and have not found what I am looking for. Any help would be great and thank you kindly. :)

I think the recipe you want is from Knox Gelatin and is called Pumpkin Chiffon Pie. I don't have the recipe anymore but it is delicious!

I am so glad to find many pumpkin recipes. I planted a large pumpkin patch with several varieties of pumpkin. When they started getting big the neighborhood kids started smashing them. I stripped the pumpkin and canned them all. I have 25+ quarts of pumpkin puree and still have pumpkins stacked on my couch!

I tried the "pumpkin pie bread" OMG it is the best loaf I've ever eaten!I used 1/2 butter & 1/2 oil, added a few shakes extra of pie spice & a few shakes of cinnamon, used fruit juice instead of water. My son, the king of banana bread making, couldn't get enough! Made mini loaves for xmas, 2 nights in a row so far. I'll see how they freeze.

If you like pumpkin try to cook with ground beef. Fry onions, garlic after onions are translucent add 1 tomato,diced. Add the ground beef, cook until is brown, add salt & pepper and the pumpkin cut in squares…add a half cup of beef bouillon- let cook for 20 minutes…in the end sprinkle some fresh parsley… voila… delicious!

Don't forget there is a difference between "cooking pumpkins" and "jack-o-lantern" pumpkins. Not sure what it is but was told to be sure to use baking pumpkins. They are usually smaller. Delicious in Pumpkin Pie.
