Lunch Box: Chicken Pops

Your kid will be the envy of the lunchroom with this dippable, crunchable combo.




What's for Lunch

Kids won't trade away this lunch--it's just too much fun to eat. They're getting crispy, coated morsels of chicken served on little sticks, with yummy sauces for dipping.

Sneak in some fresh veggies for dipping, too. Colorful, crunchy vegetables such as carrots, bell peppers, or sweet cherry tomatoes. Homemade oatmeal cookies and a carton of milk round out this midday meal. Who could resist?


Lunch Box Makeover

  • Make ahead. Bake chicken and cut veggies the day before. You could also store a big batch of coated chicken in the freezer and bake it as needed.
  • Make it lighter. Use baked instead of fried chips for the coating on the chicken. Choose low-fat and low-sodium options for the dip ingredients.
  • Make it fun. Fill mini storage containers with the dips(s) you know your kids will love to eat.
  • Make it different. Many reviewers added raisins or nuts (or both) to the oatmeal cookie recipe with delicious results.
  • Make it safe. The lollipop sticks used in this recipe make for a fun presentation, but be sure your child is old enough to eat this dish safely if unsupervised.
  • Make it safer. Freeze a small carton of milk or bottle of water to keep lunches nicely chilled until ready to eat.

    Thanks for the recipe...sounds great but ow does the chicken and chip coating hold up in a thermal lunch bag. I use frozen ice packs but is the coating soggy when the kids eat it? How do you keep it crunchy?

    This was great! Thank you, my kids loved it... and about the frozen bottle... I have been doing this for years, oldest is 25 and she still does it in the military lunches...

    The kids (8 and 11) rated this a five star. They both want it to be saved in the recipe box. A nice addition is to add some parmesan to the top in addition to or instead of the bread crumbs. Very quick for a weeknight, too.

    Just came across your lunch box chicken pops sug. loved reading it I will be trying it for myself. I'm a substitute tech. and pack lunch often. I go to many different schools so I'm going to make it a point to mention to the teacher's that this lunch would be great for students and see how many schools we have that will not allow something like lollipop sticks. Thanks keep the suggestions coming.
