Lemon Poppy Seed Loaf

Rave Review: "I used lemon yogurt instead of plain, and since I hate zesting lemons and was in a hurry I used one tablespoon of lemon extract in with the yogurt and lemon juice. I also added a few drops of yellow food coloring because the batter was not yellow at all, and it came out great--just like you buy at the store, but better!"

If you find the squares too crumbly, try adding more butter or marj. to the crust. I've done this with date squares and it works to make a richer, more carmely crust and topping

I took a pan of the cinnabon clones to the neighbors when the family was coming home for their father's funeral. I had so many thank you's and raves, that I will probably make this my standard funeral fare.
