Holiday Baking: Bake and Freeze

Bake and Freeze Recipes

Lots of baked goods can be prepared and tucked away in the freezer, ready when you need them. Here are a few recipe ideas and freezing tips to get you started.

Freezing Tips:

  • Double-wrap baked goods securely and label the outside of the package.
  • Firm up delicate cheesecakes in the freezer first, so you won't damage them while wrapping.
  • Freeze undecorated cake layers for up to a month. Fill and decorate when completely thawed.
  • Place frozen items in cake carrier to defrost, to prevent them absorbing odors in refrigerator, or thaw baked goods at room temperature.
  • Freeze pies before baking. Nut pies such as pecan pies can be frozen after they are baked.
  • Slice cinnamon rolls and sticky buns and arrange them on a baking sheet. Don't let the dough rise. Freeze until firm, then store in a heavy-duty freezer bag. The night before baking, arrange rolls on a greased baking sheet or pan, cover with greased plastic wrap, and thaw them overnight in the refrigerator. Let rise at room temperature for an hour or so, until ready to bake.

Ijust signed into allrecipes and can't wait to try these wonderfull recipes and share some of my grand ma's old time favorites..The jewish apple cake was a favorite of hers and i lost the recipe and was so happy to find it here

It says to double wrap baked goods. Saran wrap then a freezer bag or tupperware? What do they mean by double wrap.

It simply means to wrap it twice in Saran wrap then add it to a freezer bag or tupperware to freeze.

how to freeze chiken pie? should it baked first or freeze before baked? thanks

I'm wondering if there'd be a noticable difference between freshly baked cookies and the frozen ones, after thawing...of course there's NOTHING like a cookie out of the oven, but is it too risky? I usually make tons of cookie doughs, put them in tupperware, and keep them in fridge till the holiday rush to get it all done. Opinions??

Can you freeze cupcakes successfully if they are not frosted? Then take them out, let them thaw, and frost right before the party? Any tips you can give me would be most appreciated.

I know I can freeze pie dough successfully. Can someone please share ~step by step~ how to freeze pies: apple, pumpkin and peacan? ie: freeze before baking, how to thaw then cook, what temperature, how long etc. I've always baked and ate...but w/35 guests this year...! Eek

Cupcakes are easily frozen. Simply defrost at room temperature, and frost, fill and decorate as desired.

Can I freeze a cake in the pan it was baked in or would it be better to turn in out first and wrap the whole thing? Keeping it in the pan would be easier since I will be traveling with it for Thanksgiving. Thanks!

Cakes and cupcakes can easily be frosted with medium to firm consistency buttercream before freezing. I have done this several times for my kids' birthday parties. I bake, chill cake in the fridge for 24 hrs, then frost as desired. Freeze for up to one week and defrost uncovered at room temp. Colors do not run and everyone will think you slaved all day!
