Freezing Cookies and Cookie Dough

Too many cookies on your hands? Freeze cookies and dough to extend the life of your big batch without sacrificing quality.

Freezing Baked Cookies

Freezing baked cookies is a great way to preserve their freshness. We still haven't come across a baked cookie that doesn't freeze well.

  • Baked cookies will keep in the freezer for up to 3 or 4 weeks.
  • As with freezing cookie dough, double-wrap the cookies securely and write the date and the type of cookie on the outside of the package.
  • When you are ready to eat your frozen cookies, just let them come to room temperature, or, for you impatient types, pop them in the microwave on high for about 30 seconds. (Times will differ depending on the size of cookie you're defrosting.)

Freezing Cookie Dough

Most cookie doughs freeze extremely well and can be kept frozen for up to 4 or 6 weeks. Use these tips for freezing: 

  • Double-wrap dough in plastic wrap to prevent freezer burn and absorption of odors from your freezer
  • Write the type of cookie dough and the date it was frozen on the outside of the package.
  • When you are ready to bake, simply let the dough defrost in the refrigerator. This will take several hours, so plan ahead.

These cookie doughs freeze the best:

  • shortbreads
  • chocolate chip
  • peanut butter
  • refrigerator
  • sugar
  • brownies

Avoid freezing cake-like cookies and cookies that have a very liquidy batter, such as madeleines and tuiles.

    Is it possible to send frozen cookies if they are well wrapped to troops overseas? It seems they would be fresher. Any thoughts? Thanks

    During the Vietnam war I use to send frozen treats to a number of family members and friends. It works very well. It helps if you put your frozen treats into a tin of some sort before packing them in a box. Leave them in the original wrapping, just put it all in a tin.     Would you freeze sugar cookies before icing them and then do the icing when you thaw them later? Or will they freeze just as well if they're already iced?

    tj - I think you can do either. I personally have never frozen un-iced sugar cookies. But a friend of mine decorated sugar cookies for my daughter's b-day, I froze for about two weeks and they turned out fine. So I'm sure you can freeze them before icing them, too. Hope that helps!

    Cookies, brownies, cupcakes, tea breads, and cakes can be cooked, cooled, iced, and allowed to cool, dry, or harden. The spices and flavors tend to intensify and marinate. It saves enormous amounts of time, energy, and cleanup and you have a ready supply of healthy food. An extra freezer is well worth the investment. The only problem is that the kids learn to eat frozen cookies and your supply might not be constant.

    When I was in Iraq, several people had sent in cookies to the troops in repurposed Pringles cans. These worked great for cookies that were close in diameter to that of the can. Just thought it would help anyone wanting to send cookies to our troops. And, they do really appreciate all the love and generosity of those cookies!

    I have very good luck with freezing cookie dough that I have made into balls. I don't even thaw them before baking and haven't had any negative issues. Very quick and easy.

    Pam DuBry, I sent my husband cookies in Iraq and all I did was put them in Tupperware and separate the layers with wax paper. I then put a piece of bread or two in the box on top this keeps them soft and also help so that the cookies don’t move around when being shipped. Then I put the lid on and wrapped the whole container in plastic wrap and bubble wrap. He said they came perfect. I don't think that i would freaze them due to condinsation

    I know the PO has boxes for free that you can use but I would suggest you go with the flat rate shipping boxes b/c you can fill them up with as many cookies and ship them for one price, rather than pay by weight.

    In regards to shipping to the troops, the USPS Priority Mail flat rate is discounted from the normal rates when they are sent to an APO or FPO (military base) address - the large flat rate box is $11.95 (vs. the domestic $13.95 rate). Discounted to $11.50 if you print your postage online through 'Click N Ship'. Also, "The Department of Defense cancelled the 'Any Service Member' program so mail must be addressed to someone specific." - hope this helps! = )

    Suzy - you'll probably be happier is you form the dough into balls before freezing. They will thaw more quickly or can just be put staight into the oven and baked for a little extra time. A mound of dough is going to take a while to thaw out fully before you can do anything with it.

    I just discovered this site and it's fantastic. It has helped answer questions that I needed a quick answer to. Not only that, it has made my life easier/stress free for the holiday baking.     Freezing cookie dough doesn't change in consistency. Just make sure you defrost it in the fridge a day before baking. It's the defrosting that does the changing. It can get too much liquid from the defrosting and cause it to spread too much. Lots of luck

    I am so happy to have found this site. I lost my mom this year and asking questions like can I freeze cookie dough is good advice. I just wish I had read the part about rolling the balls before I froze them. The part that I can freeze dough will help me since I am short on time.     I bake cookies right from the freezer without ill effects. I've done chocolate chip, chocolate brownie cookies, oatmeal, and others without issue. When I make tassie type cookies, I make the base dough, form it into balls to later press into the mini-muffin tins, and then freeze the balls. I let them defrost, then press into mini-cups and bake. I freeze all cookies on parchment paper, then slide them, paper and all, into freezer bags. Use a straw to suck out the excess air in the bag to help keep them even fresher. Mine have lasted 6 weeks without issue. Happy baking everyone!

    this is a message for Sashi who asked about ways to freeze dough in ball form so they didn't stick together. I haven't tried this with cookie dough but I make sausage balls that are similar in consistency to cookie dough. To freeze them I place them on cookie sheets and freeze them until hard--then I put the frozen balls in a plastic bag and freeze again until ready to bake. I think it should work with cookie dough too.

    my husband is over in Afghanistan on a NATO base in Kabul. I can ask him if I can give his address if you all would like he can put the cookies and things in the common room on the base they sometimes have things that people send that they put out for the guys there that they can have for free and don't have to go buy. Things are expensive to buy and the food is just ok so sometimes they are still hungry for something good even after they go for dinner. I have sent several packages including homemade mounds bars which made it just fine without freezing. Thanks to all thinking of the men and women there! The only problem I have found is that the last time i sent 2 boxes before Christmas and I had pay the reg flat rate price because of an update in the post office system it wouldn't give APO price for his zip.

    I have over 300 sugar cookies to make for a local function in April. Any advice on how to freeze the cookies so they maintain their shape and flavor?     Emalen: Make sure the icing has hardened before freezing. Then, just layer the cookies in an airtight container between wax paper sheets. The wax paper keeps them from sticking together. Sugar cookies freeze great and don't get soggy after defrosting.

    Our neighborhood ha an annual cookie exchange in December, and I bring home 8-10 dozen cookies. I have never had a problem freezing most kinds, whether frosted, drizzled, sandwiched, jam-filled, buttercream-filled, rolled, drop, with nuts---they all freeze great. Tips: (1) Don't mix different flavors in the same container (like jam thumbprints with mint cookies, for example). (2) Don't freeze meringue cookies.

    I am making sugar cookies and decorating with the corn syrup icing. Every time the icing color changes. It gets white streaks through it or fades. Has anyone else found out what causes this and how to prevent it. I freeze the cookies sometimes and it does it one those also. I have used both the Wilton icing color and plain old food coloring. Any suggestions.

    I made a cookie cake for my daughter for her birthday party today. It was to be a pool party and got rained out. I want the cookie to stay fresh but do not have a big enough freezer.     I don't think there is one best way to freeze dough or cookies. I have shaped dough into balls, frozen and then added to a freezer bag loose and had no problem. I have also wrapped the dough balls in plastic wrap within a freezer bag and this works fine too. The taste and consistency did not change with either method. I have also frozen cooked cookies with out problem. Just put them in a container and thats it. Someone mentioned not mixing flavors. This is a good idea, although mint is the only one you should absolutely separate if you don't have space or enough containers. Do what makes sense. I have also cooked frozen dough balls without a problem. Tastes the same, but does not spread as much.

    Freezing cookie is great either before or after frosting but putting the icing on frozen cookies makes much LESS mess as they are firm and don't crumble (also works for cakes if you have the time to thaw before serving!)

    As to the bread in cookies to keep fresh. If you dont' want to use bread, use fresh orange peel. Works the same as bread and won't mold.

    YOu can also put them on a cookie sheet in scoops and then freeze them and save some time later on. Take them out a few at a time and bake them even.

    I have a large amount of sugar cookies to make for my sister's wedding favors next week. If I bake the sugar cookies and freeze them, once I take them out and thaw them to decorate, how many days will they still taste fresh? Can I start decorating thawed sugar cookies on Wednesday for a Saturday wedding? The recipe I use is the Sugar Cookie V on this site, and it's very moist as they're made with sour cream.

    Question - I want to make a favorite cream cheese sugar cookie that gets rolled & cut out. Can I freeze the dough? Do I need to roll it out first? Should I roll it out then maybe roll it up with wax paper on top so it doesn't stick together and will unroll when thawed? Or can I just freeze it in a ball to thaw & roll later?

    If I made sugar cookie dough, cut out my shapes and then froze the dough would it still work out as mentioned above? or is it better to bake them and frost them and then freeze them?     One idea I didn't notice in these posts is forming the cookie dough into a roll - like the slice & bake cookie dough you buy at the store. I form my cookie dough into a cylinder shape (easier if fridged for an hour or so before hand) inside wax paper then wrap over that with foil & freeze. Whenever you want fresh cookies, you just slice and bake from frozen (no need to thaw). You can rewrap the portion you don't use. You bake from frozen at the same temp as the original recipe, but for a couple minutes longer. I've given them as gifts to family members who have asked for them again for Christmas! Choc chip works extremely well, I also did snickerdoodle dough, with instructions to coat with cinnamon sugar before baking - delish!

    I'm making several batches of baklava and need to freeze it for the beginning of December. Should I freeze it before or after the baking?     I freeze my sugar cookies by lining a plastic container (like tupperware) with saran wrap. Then I layer the cookies and put wrap between each layer. I make sure the very top layer of wrap is tucked down in to seal the cookies as best I can. I will take them out in a few weeks to frost, and go thru the same process if I need to refreeze before the event I'm baking for. Now my favorite sugar cookies are ones that come directly out of the freezer!

    Sending cookies and baked goods is a sweet idea but before you start baking.... "Soldiers are told for their safety that they are to throw away any food that is not factory packaged." I think they can accept food packages from relatives and/or someone they personally know? As mentioned earlier, this area is not a suggested place to get or give soldier's information out. Please keep their safety in mind sweet peoples.

    You will look like the biggest Martha Stewart if you do make up a batch of cookie dough. Make cookie dough into balls and place on a cookie sheet or two. Put in freezer for about 15 minutes. They should be froze enough now to not adhere together in a freezer bag. I write my baking instructions on the bag and take them out and use them as needed. It's pretty impressive to have fresh warm cookies for pop over guests!

    I freeze cookies with same baking temperature and same baking time. Then I can take 2 or 3 different kinds out and bake them on the one cookie sheet for a little variety. This works for me because there is just the 2 of us and we don't end up with too many cookies and have a variety as well. My sheet does 20 so I get 10 each of 2 kinds or 7-7-6 or 3 kinds.

    I use a glaze with corn syrup to paint on my sugar rolled out cookies. When I put in the freezer, they get white streaks in the frosting and lose their shine. Any suggestions, as I do not want to wait until I take the cookies out of the freezer to ice.

    You all should try Pfeffernusse Cookies to send to the troops. They need to age 1 to 2 weeks anyway, so freezing is unnecessary, and it doesn't matter how long it takes to get to them.

    When freezing cookie dough, i roll into a log (or you can use well oiled waxed paper, fold the paper over the dough, and use a cookie sheet to push dough into a log shape). Then I put the dough in empty paper towel rolls, and freeze. When I'm ready to bake, I thaw the roll in the refrigerator then slice and bake!

    Another thing that works really well is to scoop your cookie dough on the cookie sheets the size you want. Throw the sheet pans in the freezer for about an hour then you can take them out put in a freezer ziplock bag and you can pull them out as many as you want and bake them right away. I love eating cookies fresh baked and still warm. Especially chocolate chip!

    You DO NOT have to defrost frozen cookie dough prior to baking. We use frozen cookie dough in the commercial kitchen where I work. You can put frozen cookie "balls" on a cookie sheet, let set for about 10 min. and then put them in the oven following regular instructions. The cookies will be a little thicker than usual, so you may want to gently press them down midway through. This is not necessary though. The cookies will be nice and soft on the inside. Because they bake on the outside before they have a chance to "melt" on the inside they are thicker-more like the cookies you find in a bakery shop.

    I just googled "adopt a soldier" and there are several volunteer organizations online that match up soldiers with people who want to show appreciation. I didn't do enough research to verify that they are all legit, but at least the first one on the list is strictly volunteer and seems honest. (ie: I might not send cash, but I would surely send cookies, lol!) Just a thought for those of you who want to show some love to the troops, but have no immediate candidate. Merry Christmas!

    I freeze all my baked cookies even frosted... they always stay beautiful and tasty.. I always store them in zip lock bags or plastic containers with a piece of white bread to keep them fresh and soft, with wax paper in there also. I have found that MY COOKIES FREEZE for up to 3 MONTHS'... at the most. So thats why I bake in advance for the holidays so my cookies will last!

    As for freezing cookie dough, I form the dough into a log, wrap in waxed paper and then in foil. When I wish to bake them, I simply slice the log and I have cookies ready for the oven. No need for extra thawing time - works great.

    When freezing cookie dough - a friend of mine would scoop them out into the size they needed to be, then put them on a cookie sheet and pop them in the freezer. When they were frozen she would put them into a freezer bag with about 6 - 12 cookies in each. This way when the kids got home from school - she would bake them fresh cookies as a treat. They don't take much time to defrost either. From what I remember she didn't even defrost them, she would just pop them in the oven. They were wonderful!

    Just joined,love this site-to Kimberly: I made baklava for my daughters wedding baked with syrup,froze for 2 months and it came out great! Thawed and put into small tin muffin foils for the italian cookie table-they were a big hit. Plan on it for next daughter in August. Can't wait to try all the italian cookie recipes everyone has shared, with tips too!

    To avoid heating up my kitchen in the summer months, I do all my baking ahead of time. My cookies are in the freezer from May till Sept and they are always fresh when defrosted. I store in an airtight container.

    When I make my favorite chocolate chip cookies I form the dough into a log and wrap it tight and freeze. Then when I want fresh cookies I just cut off what I want and put the rest back in the freezer. I don't thaw the dough before I bake. So quick.

    Every Christmas I make cookies and baked goods for family/friends/coworkers, etc. I make my cookie dough ahead of time and freeze it. Choc. chip, oatmeal raisin, butterscotch, lemon, and sugar. All doughs freeze well. I just put all my dough in freezer ziptop bags with date/type. I don't make them into balls ahead of time because it saves space not to. I have a cookie dough scoop so partially thawing, scooping and baking is no problem for me. Was thinking about baking cookies ahead of time and freezing them instead of making dough ahead of time and waiting till the week before Christmas to bake everything. Also make fudge, no bake cookies, rice krispies, mounds balls, and sugar spiced nuts which are all labor intensive, so there's a lot of work. If I can freeze my baked cookies ahead of time, then I'm thinking Christmas will be a breeze this year. Make a batch or two of cookies every weekend, freeze them and do all the candy a week or two before. I won't be so exhausted. Jus

    I use a cookie scoop for size, place them tight on a cookie sheet, freeze and then put the cookies into a zip lock gallon freezer bag. They last a long time. I pull them out and bake them frozen. Works well for my oatmeal/choc. chip cookies. For the holidays, I mix up cookie dough, keep it in the frig in a gallon zip lock bag and scoop out a few dozen at a time so they are freshly baked.

    I'm interested in freezing pumpkin drop cookies that are pretty cake-like. The problem is that each recipe makes around 60 cookies (too much for my husband and I) which is just using one can of pumpkin. I hate to waste half the can! Would they keep in the freezer or is it better to freeze the dough? Thanks!

    I have frozen pumpkin drop cookies for a few months and they have come out very fresh. I send cookies every month to our troops so I try to bake large quantity of cookies so I can freeze for future use. Every one of my drop cookies and brownies has frozen quite well.

    I've just finished umpteen batches of cookie balls made with cream cheese. NOW I realize it may have been a bad choice but the recipe was SO easy. My question is how long they can stay without refrigeration without spoiling. I intended to make cookie bags for the local shelter to distribute but I don't want to take any chances with food safety. Since I may have already screwed this up, does anyone have any ideas what I can do with these cookies now? Can I ship them somewhere using dry ice and if so, where does one get dry ice? Thanks for any help!!!

    I use an Ice cream scoop and scoop them onto a wax paper lined sheet pan that fits in my freezer. Once frozen transfer to a freezer bag and date, baking instructions, and a use by date.

    I would like to bake many, many cookies for a wedding in June, 2013. How far ahead can I make the cookies and/or the cookie dough. Four to six weeks sounds like a short time to do this all.

    I just tried freezing some chocolate chip cookies. I put them in a freezer safe bag after they cooled. I took one out today (a few days later) and let it thaw in room temperature. It is OKAY. But LOVING chocolate chip cookies, I can tell they are not quite the same as fresh made. I'm gonna try freezing dough next and see if that's any better. Maybe double wrapping it too.

    I love this site. I'm changing how I cook. Working more from scratch so it's wonderful to see so much advice on how to make the most of what we're cooking and baking. I have never frozen baked cookies but have made many many different cookie dough recipes and frozen them with great success. Only problem??? The kids will eat the dough barely thawed. :D Guess I should appreciate them cutting out the baking step for me. Such thoughtful boys. ;)

    Realizing this comment is several months after the question....I have frozen sugar cookies prior to frosting. It's no problem! It's a life saver at the Holidays.

    I've never frozen dough, but have refrigerated for a couple of weeks with no loss of taste or texture. I like to make several different doughs at one time-say spend a morning doing that, then refrigerate until I have time to bake. Just be sure the dough is wrapped well. Cold dough is always easier to handle anyway, even if just refrigerated for a couple of hours.

    I froze Peanut Butter Blossoms and Red Velvet cookies, in separate Rubbermaid containers. One week later when I wanted to share them- they were very dry!! So frustrating as I thought I was saving time before the Holidays! I threw them out! Any suggestions how to avoid this disaster next year?

    I've been an avid cookie baker for many, many years and am known for the many kinds of cookies I make as well as the quality of the cookies. Most baked cookies freeze extremely well. Use rigid plastic containers for soft or delicate cookies (like cut-outs etc.). Place waxed paper between each layer. If there is air space in the top of the container after all the cookies have been placed inside, fill the airspace with crumpled wax paper. Cover with an airtight lid. (Air is the enemy.) You can also freeze crisp, sturdy cookies this way but I've also found that placing sturdy cookies (like Gingersnaps or Snickerdoodles) in gallon size zipper freezer bags, and pressing out the air, works just as well, especially if only freezing for a week or two. DO NOT mix different cookies in the same container! Crisp cookies could soften if placed with soft cookies and soft cookies could dry out if placed with crisp cookies.     Frozen cookie dough is best made into balls, placed on wax paper on a cookie sheet (very close together so you can get more on the cookies sheet), covered with plastic wrap and frozen. Once the individual balls are frozen they can be placed in freezer Ziploc® bags or freezer containers and stored in the freezer until ready for use. They can also be vacuumed sealed, if you desire, since they are solid and won't squish with the vacuuming. If you don't have a vacuum sealing machine, you can also place the frozen balls in a freezer Ziploc®, place a drinking straw partway into the bag and seal the bag up to the straw. Now, you can suck the air out of the bag with the straw, and pull the straw out as you finish sealing the bag. This is great when there are only two of you in the house. You can bake as many or as few as you like, and have fresh baked (warm from the oven, if you desire) cookies without feeling you have to eat the entire recipe so they don't go bad.

    The problem is that the kids love the frozen cookie dough. The cut it off in chunks with a butter knife and eat it after school. In fact they are sad if I bake the entire batch and don't freeze any. Never once have we thawed the dough and backed it because it is always eaten first.

    I never have too many cookies. My hubby gobbles them up faster than I can finish baking a batch. I think I would be better off if I made the dough and separated them by the dozen and froze it. I will definitely try this.

    I have been freezing baked goods for years. I freeze lots of bars, iced sugar cookies, and drop cookies. They come out perfect but I wrap each one in wax paper individually, then put them in freezer Ziploc bags. The wax paper absorbs freezer taste and odor. I have found that an actual separate freezer works best for long term freezing because it keeps an even temperature and will keep baked goods much longer than anticipated. Chocolate chip, oatmeal, peanut butter cookies and similar drop cookies need to be baked for a few minutes after removing from freezer to revive the "just baked" texture and taste.
