Chipotle Chile


Chipotle chile is the dried and smoked fruit of Capsicum annum, known as jalapeño. The product is made from chile peppers grown in northern and southern Mexico. Chipotle has a distinctive, smoky, sweet, meaty flavor with a moderately high heat level.


Chipotle chiles are used to season Mexican and Central American cuisine. Chipotles are used in chili, snack seasonings and Tex-Mex cuisine.

      My favorite thing to do with chipotles is to buy a can or two of chipotles in adobo sauce. I have an Osterizer blender that comes with the small container - maybe 8 or 12 oz. I puree the chipotles with the sauce, put in a small jar in the frig. At this point it is called chipotle paste. Use a tsp or more when cooking meat for taco's, marinade for fajita's, add to your pico along with some lime juice, etc. Wonderful flavor without being over powering or too spicy. It keeps forever in the frig. Use a glass jar to store it in. It will "permanently flavor" plastic storage containers.

      I need instructions. What is the process for making chipolte peppers. We always have a lot of jalapenos in the garden. We have a smoker...Does anyone have a good recipe?

      When I buy a can of chipotle chilis I wrap what I dont need individually in plastic wrap, put in a ziplock and store in freezer. When you need one its easy to take just one out at a time

      Thank you Trish, I'm going to do that right away. When I open a can it really is too much to finish and I don't want to waste the whole thing. Great idea.

      I buy the chipotle in adobo sauce and make chipotle-mayo. I add about 1-2tsp chopped chipotle w/sauce to about 1/2 cup of mayo and keep it in the fridge for sandwiches and burgers. It lasts forever and is so yummy!

      Wow, I've been looking for "Chipotle paste" because it's called for in the yummiest sauce for crab cakes and now, I have it. I feel stupid that I didn't think of that as the "paste". I was going to just use one of the chipotles out of the can as is. Since the recipe came from a chef I thought he bought "paste". Thanks so much.

      Great Idea Trish! I'll bet that if you added a Tbsp of that paste to about a cup of mayo , then some lime and cilantro it would be a great aioli for fish tacos.

      I love it in chunky home made chicken soup with real chicken stock and California blend vegetables .The chipolte gives the kick it needs. Chefhorse that sounds great too
