Chili Powder


Before you embark on your next grocery shopping trip to stock up for that big pot of chili you've been craving, note that chili powder is not the same as chile powder. Chile powder consists purely of dried and ground chile peppers, while chili powder is a combination of ground dried chiles, oregano, cumin, garlic and salt.


Chili powder is most commonly used to season chili. It also shows up in enchiladas, spice rubs, and other Mexican and Tex-Mex dishes.

    I had no idea "chili" and "chile" were different. No wonder I too haven't had the best chili. Great info.

    I have done some research on chili owder andhave found that many brands us MSG rather than salt. For many, including myself, MSG causes allergic reactions, usually in he form of a skin rash. I've ended up going to Chili Pepper to avoid this but I do admit addin a little salt to get what I expect from Chili. I believe many people don't eat and enjoy food made with chili powder for similar reasons. MSG apears tobe the culprit.

    So why is there not a recipe for chili powder?? I would like to make my own and I have a recipe for cincinnati chili that call for a 1/4 cup. Seems like it would be more economical.

    I cook chili in competition and some Chili recipes call for light and dark chili powder. What is the difference and where can I find them? Also, can you help me find "granulated" onion powder?

    I found an interesting place for all kinds of chile peppers and chili powder, some without MSG or salt. It's called Pendery's World of Chiles and Spices, based in Fort Worth TX. They have a free downloadable catalog at if anyone is interested. They might have some of those hard-to-find chiles and spices, as well as granulated onion that Maggie was looking for.

    "Chile" powder can be made from any dried pepper. When substituting in a recipe calling for commercially combined chili powder, you need to find a mild "chile" powder so that you get the flavor of the pepper in your recipe without overwhelming with spicy heat. Hotter ground red peppers may then be added for spicier flavor. (The word chile is Spanish for hot peppers; not sure where the word chili came from.) I hope this is clear!

    Thanks! This is my "something learned" for the day. I have known for years that chili powder was a mixture of spices but did not know about chile spelled with an e. I have usually been able to find ground chile peppers (without the added spices) in the mexican section of my local supermarket.

    Hilarious story: We'd just moved from Canada to Qatar where I bought Chile Powder to make Chilli. As chile powder lacks a large amount of taste that the other ingredients add to make the distinctive flavour, I kept adding the powder till I could taste it. My eyes have never watered so much in my life. It was so hot my wife was swearing at me for always making things too hot! Lesson learned the hard way on the difference between chilli powder and chile powder.

    Just thought you may like a simple chilli powder recipe from my collection. Homemade Chilli Powder Ingredients 1 dried ancho chilli, 65 ml/1/4 cup dried oregano, 65 ml/1/4 cup cumin seeds, 65 ml/1/4 cup coriander seeds, 65 ml/1/4 cup paprika powder Method Place all of the ingredients into a spice or coffee grinder and grind until they are powder. Store in a preserving jar in a cool place. It is possible to substitute other chillies for the ancho so experiment a bit. Thanx all. 'nuf sed plamuk aka travellingchef

    I am making barbacoa today and realized that I am out of Chili Powder. I am so happy to have found this recipe! Now, I do not have to go back to town just for one item!

    The "BEST" Chili Powder, IMHO, is MEXENE. A good blend of spices and NO MSG - they use salt. Not always available nationwide, it's from Bruce Foods, El Paso, TX. Kroger carries it.

    The best chili seasoning that I ever used was "Chili Bowl" chili seasoning and I used it for 30 years. They have now went out of business and from what I can find out did not sell their recipe to any other company. Does anyone have the recipe to this chili seasoning?

    I would like to make my own chili powder. I am allergic to garlic. I know it won't be as good but at least I can eat some chili. Craving a big bowl of chili. Anyone have the recipe?
