Balsamic Vinegar

Cooking with Balsamic Vinegar

Balsamic vinegar is delicious drizzled over salads, of course. But try it in cooked dishes, too. Balsamic vinegar holds onto its spicy kick, balancing the rich flavor of meat, poultry, and fish, and adding welcome acidity to vegetables. Some Italians even toss back balsamic vinegar as a tonic, sometimes mixed with a bit of water.

Best of the Balsamic

Traditional balsamic vinegar comes from fermented trebbiano grapes often aged for decades in a series of small barrels. Over time, the vinegar becomes increasingly concentrated into a complex-tasting syrup.

The best balsamic vinegar is Aceto Balsamico Tradizionale di Modena. Its honeyed flavor is one of a kind, but it can be expensive. Good thing a little bit goes a long way! For something less pricey, look for balsamic vinegars labeled simply Balsamico di Modena (without the "tradizionale") or coming from the Reggio-Emilia region of Italy. And keep an eye out for good domestic brands, too.

The best balsamic vinegar I've tried - and now use religiously - is Barrel Aged Balsamic Vinegar by the Spicewood Food Company. So amazing, you'll want to eat it with everything!

I live in Italy where I was introduced to really good balsamic. My wife and I love it. Dip bread, pour on salad, mix with EVOO and then dip more bread. I grill Italian sausage then drizzle just a few drops it really makes them pop.

If you are looking for a good balsamic vinegar to cook with and and "everyday" vinegar, check out costco's kirkland brand, it's aged, and sweet, it adds great flavor and it's relatively affordable. For anything else more special go with at least a 10+ and you will be in bliss!

One of my most favorite summer treats (which I am eating right now), is watermelon sprinkled with balsamic vinegar. It is SO refreshing in this heat! For a salad, I add chopped red onions and feta to the watermelon.

I have to agree with Luv2Cook, Costco's Kirkland balsamic is what I use and it is very good and a great price.

Try balsamic vinegar over vanilla ice cream. It's an unusual treat.
