I precook chopped onion and peppers in the microwave before I add them to my meatloaf mixture and I use chipolte bbq sauce instead of ketchup for a little heat.

They all sound horrible to me. Too sweet - and cannot stand any ketchup or tomato sauce. I use mushrooms and onions and cheese and make a mushroom gravy to pour over. To each his own!

My meatloaf is great! 1 lb. lean ground turkey 1 lb. lean ground beef 1 egg 1 c Ritz or Townhouse crackers (or both) 1 tsp salt 1/2 tsp pepper 1/4 tsp dry mustard 1/4 tsp sage 1 small onion Whatever you want on top (ketchup, tomato sauce, chili sauce....etc. For a smokey taste, add 1 tsp liquid smoke!

When growing up we had two types of meatloaf...one was Italian/tomato based (mom used Contadina meatloaf mix) and the other was a delicious oniony meatloaf that had a mushroom gravy. Love them both! None were sweet like these though, not a fan of them.

All these recipes sound so complicated. My favorite is 3 lbs. hamburger, 2 eggs, 2 Tbsp worcheshire, 1 envelope Lipton onion soup (may use beefy mushroom too) 1 cup catsup, 1 cup old fashioned oatmeal, 1/2 cup plain bread crumbs. (no chopping) Mix thoroughly with hands (this is really a trade secret) shape into a flattened oval shape and cook on a rack over a 3" deep pan to catch the drippings. Cook at 350 degrees for 1 hour and 15 min. Let rest for 20 minutes before cutting. YUM!

Our G’kids won’t eat anything that has been near ketchup, (how weird is that?) So I came up with a variation that they absolutely love. No problem with getting them to eat veggies either. They use them to temper the moderate heat in this dish. Steelchef’s Awesome Asian Meatloaf 1. 1 1/2 pounds ground beef; not extra lean 2. 1/2 pound ground pork; not lean 3. 1 cup unsalted crackers, crushed (or dried bread crumbs) 4. 2 eggs 5. 1 -1/2 cups onion, finely chopped 6. 2 stalks celery, finely chopped 7. 3 tablespoons soy sauce 8. 1 teaspoon powdered ginger 9. 2 tablespoons Oyster Sauce 10. !/4 cup Sweet Chili Sauce (Plus additional for glaze and serving.) 1. Preheat oven to 350 degrees F (175 degrees C). 2. Mix items everything together, (I use the stand mixer.) Press mixture into a well greased bread pan. 3. I owned a small mom and pop eatery in the 80's and I developed a meatloaf recipe that brought people from miles around. My family asks for it for Christmas presents. Every year I make 10 or so and give them as gifts to neighbors, extended family and one meal for our family. I have to make large quantities because I have never been able to break it down where it tasted the same.

My favorite meatloaf recipe is chopped meat add diced onions with garlic powder, ketchup, mustard, worchestire sauce, eggs, bread crumb, parsley, oregeno. Then after I shape it I slice an opening in the top and put 3 slices of cheese in close it up and lay a few slices of bacon on top. I top it with tomato sauce but u can use gravy if u want. Comes out amazing!

Baking Hint--I bake most everything and hate scouring SO, I line dish or pan in HEAVY foil to save my sanity. Seldom fry or use stove top. Burned on tomato sauce ruins my whole week.

This is a recipe I got from the back of a tv guide years ago...It's one from Vincent Price. Some of you may not know who he is. 1-11/2 lbs of hamburger, a can of OLD FASHIONED VEGETABLE SOUP...has to be old fashioned. USE ABOUT1/2 can and half the liquid to get a moist mixture. Bread crumbs as needed..keep it moist. Shape and bake. 350degrees

My recipe is simple, but good. 2-1/2 lbs ground beef 3/4 cup quick cooking oatmeal 1 egg slightly beaten 1 cup tomato juice 1/4 cup finely chopped onion (sauteed in a little margarine until soft) 1 teaspoon salt 1/4 teaspoon black pepper Form into loaf with hands. Bake 350 degrees for 1 hr. Add chili sauce to top and put back in oven for 15 minutes. My grandson loves it!

Growing up in Sweden my mom made stuffed meatloaf and that's what I make and have got many compliments for it. Use your basic recipe, eggs, breadcrumbs, onion ( I grate mine) garlic, salt, pepper. When it's all mixed I flatten it out on a cutting board and put a liberal amount of chopped ham or bacon, ( if you use bacon be careful with the salt) then slice sharp cheddar and put over the ham. Fold up the sides and ends, making sure it sealed tight so the cheese doesn't leak out. Bake and enjoy!

Not a huge fan of onions so what we do is saute the onions first till they are nice and soft then ad them to the meatloaf mixture. Makes it perfect. We also use multigrain cheerios for our bread crumbs. Yum!!

try using ground turkey, add capers, golden raisens, onion, bell pepper, pine nuts parm cheese and your favorite spices. Good bread crumbs help and sometimes I wrap it in procuietto before baking

Applesauce Meatloaf : 1-1/2 pounds ground beef 3/4 cup unsweetened applesauce 1/2 cup finely chopped onion 3/4 cup cracker crumbs 2 eggs 1-1/2 cup milk. Bake 350 for 1 hr 20 min. Glaze for top : 1/4 c brown sugar, BBQ sauce, 4 T prepared mustard. It becomes very juicy, drain before applying sauce. It is very tender, enjoy!

Our family's favorite, fast & yummy meatloaf includes 1 box of any seasoned Stove Top Stuffing, 1/2 cup catsup or bbq sauce, 2 eggs, 1/2 cup water in 1-2 lbs. lean ground beef. Got a new meatloaf pan which allows fat to drain off while baking.

These sound sweet, I use 1lb. ground beef, 1/2 lb turkey, 1/2 lb ground pork, 3 tbspn flour, lipton onion soup mix, 1 egg, 1/4 c. water for moisture, bacon on top. Sometimes I will add bbq sauce for a change, and stuff with cheese. Never have leftovers. (flour instead of oatmeal, or breadcrumbs)

I have never used brown sugar in meatloaf. Hmm. My husbands favorite meal is meatloaf and mashed potatoes. Comfort food! Clasic Meatloaf: 1 lb ground meat (whatever you use) 1/2 cup milk, 1 egg, Worchestershire sauce, Lowerys seasoned salt, crushed crackers, I make my own bbq sauce with tom sauce, mustard, brown sugar and hot sauce! YUM!!!!

I agree, these are too sweet and I detest ketchup or tomato on a meatloaf. My hubby would hate these. But my grandmother used to make a meatloaf smothered in onions that was moist and delicious and oh-so-flavorful! I've tried to replicate it, but it seems it went with her for the ages.

None of these five recipes look like anything special - a preponderance of ketchup!!! I bought a special meatloaf pan that allows the fat to drip out. Although I use lean ground beef that has more flavor and not so much fat and water filler. I add A1 or HP Sauce (an english sauce similar to Heinz 57)instead of all that ketchup.

Every meatloaf is a surprise with me. Ground venison(ground with sausage)+ lean beef. Add fresh or frozen spinich, fine chopped waterchestnuts,celery,chopped cranberries or craisons,graded or fine chopped carrots, green or red peppers, graded squash, & whatever your tastebuds find in the frig or pantry. Put 1/2 mixture in pan, add cheese (whatever on hand),cover with remaining, or make a 3-layer. Mini's are fun (just make large enoough to slice for that yummy meatloaf sandwich tomorrow). Favorite glaze: brown sugar, ketchup & worchestershire mixed to your taste. V-8 juice is my best choice for moisture. I've only had one POOR suprise in over 30 years & bad part was it was overcooked & dry.

Too much sugar. 2 lbs lean ground beef 1 onion minced 1 bell pepper minced 3 stalks celery minced 1 carrot grated salt, pepper, worchestershire sauce, stone ground mustard, 2 eggs The meat can be all beef or a mixture of turkey and beef. Carmelize the onion; add the rest of the veggies and pour over meat. Beat the eggs, mustard and worchestershire sauce with 1 teaspoon each salt, pepper and granulated garlic. Bake or put in a crock pot lined with a crodk pot bag to drain the jusices. Crock for 5 hours on low, drain and put in a pan, slather with catsup and broild for 3 to 5 minutes. Great flavor none of the sugar except what is in the catsup.

I have never seen any like mine. I use ground turkey, spicy bulk sausage and ground sirloin. I mix in bbq and some hot sauce, use oatmeal as a binder and make layers on my broiler pan so the fat drains. Between layers I add cheese and pickles. Put bacon on top and it's like a cheese burger. YUM!

I have never heard of brown sugar in a meatloaf. I know that ketchup is high in sugar and sodium and have always thought it complimented the meatloaf. I can't endorse nor even try any one of these meatloaf recipies.

I found the Interstate Meatloaf recipe so here it is: Classic Interstate Meatloaf recipe is ready in 1-2 hrs INGREDIENTS: 3 tablespoons unsalted butter 2 cups finely chopped onion 1 bell pepper finely chopped 1 celery rib finely chopped 1 teaspoon dried thyme crumbled 2 pounds ground beef 1/2 cup rolled oats 2/3 cup ketchup 2 eggs beaten 2 teaspoons salt 1 1/2 teaspoon black pepper 4 slices bacon halved crosswise

DIRECTIONS:

In a skillet melt butter over medium heat. Add onion, bell pepper, celery and thyme. Cover and cook 10 minutes; stirring often. Remove from heat and cool. Heat oven to 350 degrees F. In a large bowl combine ground beef, onion mixture, oats, 1/3 cup of the ketchup, egg, salt and pepper. Mix thoroughly. Spoon mixture in to a large shallow baking dish. Shape it in to a flat loaf. Spread remaining ketchup over loaf. Arrange bacon pieces on top; overlapping if necessary. Bake about 1 1/4 hours or until completely cooked. Let stand 1

Because tomato based products are hard on my stomach, I use apple sauce. Two to one hamburger to pork sausage. 1-2 beaten eggs , a handful of contadina bread crumbs, 1 pkg. of Lipton onion soup mix, about a cup of apple sauce. Mix together and make a loaf. Then 'frost' whole meat loaf with more apple sauce. Bake at 350 til done. This also makes the best sandwiches. So make enough with that in mind............

I originally got this recipe out of a 1999 TASTE OF HOMES magazine, and it was titled LITTLE CHEDDAR MEATLOAVES, easy to prepare and you will get raves. Try it, you will love it!! (Yes, the recipe calls for onions, either fresh or dried flakes.) Great recipe!!

I am not a big fan of meatloaf but my husbands and boys love it. It seems odd that these were the top five since they all seem to be on the sweet side. I have found an alternative for mine and that is I mix the meatloaf (your preference) and then I cust yellow, red and orange bell peppers into rings about 1/2"-3/4" think and press the meat mix into the rings. I sear them (not necessary) and then put them on a rack and pan in the oven for about 30 min which in turn roasts the pepers. I have to make large batches for lunches and usually the boys friends show up because they love them.

If you dont like the taste of the chopped onion in the meatloaf, just put the onion in the blender with the eggs. The flavor goes thru and no pieces to chew. If you put your meatloaf on a rack in the pan, put a little water on the bottom so the grease or sauce does not stick to it. Cleanup is easier....

Meatloaf is as versatile as chicken. Mine is never the same. A must base is ground meat, onions(yes)& peppers. Everything else adds your personal touch. I've used breadcrumbs, stuffing mix, oatmeal, dried bread cubes, etc. I've added wheat germs, silk tofu, flax seed, etc. Never thought of Quinoa or cornmea. Will try them. Always put catsup, steak sauce, hot sauce, etc on the table. Like salad dressings, use what you want. With 4 teenagers & finicky adults it's best they flavor their own. The only time I got sick was when a nephew of mine poured maple syrup over it. But then again, to each his own. I'll just continue to make my meatloaf with the basics and add accoring to how I feel that day.

Here's my easy meatloaf - everyone loves it. 2 Lbs. Ground Beef (93%) or Ground Turkey. Salt & Pepper to Taste 2 eggs 1 sleeve Saltines (crushed) 1 can Hunts Family Favorites Tomato Sauce for Meatloaf (has the veggies already in it) Preheat oven at 350F. Spray 2 Qt. baking dish with non-stick spray or line with aluminum foil (for easy cleanup). Place all ingredients in large bowl in order listed. Mix well with hands until sticks together well. Form into oval or round loaf. Place in baking dish - Spread Ketchup (BBQ Sauce or your favorite)over top. Bake for 45 minutes Serves 6-8 or 4 hearty eaters. NOTE: Can also shape into individual loaves and bake. ENJOY!

To add veggies without chunks, we put in green peppers, onion, stalk of celery and handful of baby carrots in the blender with the liquids. Pureed, you get flavor and nutrition without kids noticing the veggies are even there.

A few tips for meatloaf: chop and carmeilze the onion in a pan with butter before adding to meat. It takes about 20 minutes. Also, add 2 shredded carrots and, if you like belll pepper, add a chopped red or green one. Tese steps really add to the taste.

my mom always made a basic meatloaf using ground beef, onion soup, a little garlic powder, an egg and some breadcrumbs, for the gravy she would combine a can of campbells condensed cream of mushroom soup with a tablespoon of french's yellow mustard that is it, bake it in the oven until cooked

I make my meatloaf with 1 pound of hamburger and 1 pound of hot sausage. I add diced Rotel tomatoes with hobinaros and Italian bread crumbs. I follow the normal meatloaf ingredients to bring it all together. My Sweetheart loves it.

I really love all the tips about meatloaf. Everytime I make it, it is a little diffrent, mostly basic. gr. beef, low fat, eggs,crackers or bread crumbs, milk, onion soup or just chopped onions, have to have garlic, salt (a little) pepper, that's it, I am anxious to try other ingredients, no sweet tho.

We also had a restaurant, over 31 years. 1 1/2# hamburger, 1# pork sausage, 1 egg, 4 hard-boiled eggs, 3 slices white bread soaked in milk, then squeezed, small can tomato sauce, 1 clove garlic finally chopped, 1/2 onion grated, salt and pepper to taste. Mix all ingredients well (except hard boiled eggs) Pat out flat on wax paper. Lay four peeled hard-boiled eggs on top. Then roll meat around them into a loaf. Put in pan. Pour smalll can tomato sauce over loaf. Bake 350 about an hour. Serve hot or cold.

Why sugar in a meat loaf? Our national nutrition problem is obesity, isn't it?? Try some finely chopper onions; carrots, celery....and go light on the salt, too!!

Whenever I make meatloaf I add sauted onions, bell peppers, grated carrot, finely chopped mushrooms and finely chopped red cabbage. Aubergine also works well. This is not only good for the family, but it also makes the meat go so much further. I like the texture of the meatloaf better too.

Gee it's hard to please everyone. Yes everyone has their favourite meatloaf recipe, but you might just like one of these if you try it. My Aunty use to make an awesome meatloaf, but no one thought to get the recipe before she passed away. So I'm happy to try every recipe to see if it even come close to my Aunties recipe. Thanks for the recipes!

My mom always made her meatloaf using graham crackers(crushed), egg and a little milk. Super simple..a little sweet..but not too.

Any meatloaf recipe is 100% better cooked indirect on a charcoal grill. use foil loaf pans so there's no clean up. I like to make mine in the mini loaf pans, so I can add toppings to everyone's likeness. Cooking time is about the same as in the oven If you love charcoal grilling, give this a try, you won't be disappointed.

Great ideas. But in order to cut back on beef but still retain the taste, i use 1/3 beef, 1/3 turkey and 1/3 tvp (textured vegetable protein). Soak tvp in hot chicken broth to soften. add eggs, parmesan cheese, and ketchup. Good hot or cold. Beekay, you are correct in adding milk to bread in your recipe. My father, who owned his own restaurant by the time he was 21, always told me this kept the meatloaf moist.

Well, I would like to know if anyone was emailed the recipe for LSSMC's meatloaf. If so, why not post it for all of us. I wonder if you used applesauce with extra lean ground beef if it would keep it moist? I like to grind my own beef without a lot of fat and this way I know what is in it. I'm not really a lover of meatloaf, but my husband is. I've never thought I'd do this much research into making a meatloaf but there are many good ideas listed here. I would probably collect all my left-over veggies in a container in the freezer, then chop them up and throw them in. ((^_^))

i usually add some red and green peppers, and onions, finly minced, i saute them, let them cool then combine them with the rest of the herbs, and milk, and onion, and garlic powder,eggs, i use black angus beef, that makes a big difference, it turns out so fluffy and moist, regular beef tastes like chewing rubber bands, try these tips, you will love it hopefully, as that is the only way my friends and family will eat it, once they have tasted the difference in the beef and the light saute on the veggies, i use ketchup on top, or med salsa, both are great or you can combine them, happy eating!!

I have a great recipe for roquefort meat loaf which my family has adopted as their "very favorite". We serve it with mashed potatoes and a sweet sour cabbage much like my German Russian mother used to make. It is soooo yummy!

I've made a lot of meatloaf recipes and really love the one by Martha Stewart's mother. The only thing I refuse to put in meatloaf is OATMEAL. Makes it gummy! If I use any type of bread, I use very finely crushed saltine crackers. They don't weigh down the meat at all! Do the same thing when I make meatballs.

Just an FYI for those that don't like a sweet meatloaf....the Rempel recipe is NOT sweet at all, more savory. DH hates sweet foods and has never been a fan of meatloaf until I made the Rempel version. Now he asks for it all the time. And if you have a Nuwave oven, it comes out even more flavorful than in a regular oven.

I read the following post and like mos, we have our favorite way to make meatloaf, but great to see other ideas. I am not a measure person pretty much eyeball, but brown sugar would be more of mixing it with the ketcup and basting meatloaf at the end. I seem to make it different everytime and to what I have on hand but hubby likes it no matter.

Unfortunately for me, I am very allergic to MSG(gives me severe heart palpitations) and Lipton Soup products as well as Campbell Soup products have this in them. Also, most commercial broths have it...even when they say no MSG, there are ingredients in them which are "cover up" msg(long list icluding hydrolyzed soy protein and many more). Since there are many reactions from msg, I wonder how many people react in different ways and don't know that it is msg causing it?
