Original Recipe Yield
4 pounds boneless pork shoulder roast
1 can Original Rotel (or other Rotel to suit taste)
2 teaspoons chili powder
2 teaspoon dried oregano
2 teaspoons minced garlic
2 teaspoons salt, or to taste
1 packet taco seasoning
1 bottle Negra Modelo beer
Trim as much fat as possible from roast, pat relatively dry, and place in slow cooker.
Combine all ingrients except the Negra Modelo beer in a small bowl. Slather mixture over top of roast. Pour Negra Modelo around roast, trying to minimize disturbing the mixture on top of roast.
Cook roast for 5 hours on high or 8-9 on low, turning roast over half-way through to cook more evenly.
Shred cooked roast and serve with favorite taco fixings and tortillas/shells. Spanish rice makes a perfect side.
