Shrimp, andouille and chicken simmer with classic jambalaya ingredients in this easy slow cooker meal. This is a slow cooker modification of a classic Emeril recipe

  1. In large saute pan saute celery, onion & green pepper in a little olive oil. When cooked, add to crock pot.
  2. Add the chicken, sausage, tomatoes with juice, and broth. Season with oregano, parsley, Cajun seasoning, cayenne pepper, and thyme. Mix all ingredients well.
  3. Cover, and cook 6 hours on Low, or 3 to 4 hours on High.
  4. Add cooked rice and adjust moisture with additional chicken broth.
  5. Stir in the shrimp and cook an additional 30 minutes on low.
