Homemade Flour Tortillas

This homemade flour tortilla recipe produces warm and soft tortillas perfect for soft tacos or burritos.

  1. Whisk the flour, salt, and baking powder together in the mixing bowl of the food processor by pulsing for a few seconds. Put the lard into the work bowl and process in 1 second bursts until the flour resembles cornmeal.
  2. Add the HOT water through the top of the food processor and process on 1 second intervals until the dough comes together (this will only take a few seconds).
  3. Place on a lightly floured surface and knead for 2 or 3 minutes until smooth and elastic.
  4. Divide the dough into 24 equal pieces (about 2 ounces each) and roll each piece into a ball. Continue with other dough and cover with a slightly damp cloth and let rest for 10 minutes.
  5. Preheat a large cast iron skillet over medium-high heat.
  6. Use a well-floured rolling pin to roll a dough ball into a thin, round tortilla. Turn each tortilla 45 degrees after each pass with the rolling pin.
  7. Place into the hot skillet, and cook until bubbly and golden; flip and continue cooking until golden on the other side. Place the cooked tortilla in a tortilla warmer; continue rolling and cooking the remaining dough.
  8. Preheat oven to 200 degrees. Put completed tortillas in a dampish cloth and place in oven inside the cloth to keep warm.
