Stella's Texas Chili

This is a Texas style chili recipe without beans or tomatoes. It also uses hamburger rather than chuck. Leaving behind a small amount of the hamburger fat gives it that unique Texas chili taste. Also: You don't need tomatoes to make chili; tomatoes are for salsa. Serve your chili WITH your beans - don't cook them together.

  1. In a stockpot over medium heat, brown the ground beef until no longer pink. Stir in onions and minced garlic, then cook until onion is clear. Drain off grease, reserving 2 tablespoons to remain in the pan.
  2. In a small bowl, stir together the chili powder, cumin, and flour. Sprinkle the mixture over the meat, and stir until the meat is evenly coated. Stir the oregano into the meat mixture, then pour in the 2 cans of beef broth. Season with salt and pepper.
  3. Bring to a boil. Reduce heat to low, and simmer for 30 minutes to blend flavors. You can also cook this in a slow cooker on Low for 7-8 hours, but you might need to increase the seasoning.
  4. Serve with tostadas, and your choice of toppings: sour cream, jalapeƱos, shredded cheese, etc.
