  1. Preheat oven to 375 degrees F (190 degrees C) line 2 12 cup muffin tin with muffin liners, or spray well with non stick cooking spray.
  2. In a small bowl, combine oil, buttermilk, egg and vanilla. Beat lightly. In a separate large bowl, mix flour, salt, baking powder, baking soda and sugar. Toss in chopped strawberries and stir to coat with flour. Pour in milk mixture and stir together. Mix by hand and just until incorporated-batter will be lumpy.
  3. Fill muffin cups. Bake at 375 degrees F (190 degrees C) for 25 minutes, or until the tops bounce back from the touch. Cool 10 minutes and remove from pans.


Nice and easy recipe! I did do what other reviews had suggested and added extra sugar (brown), vanilla and about 1/4 C extra chopped strawberries. I think that next time I will add a bit of a s...
