Slow Cooker Pork Carnitas

Carnitas tacos filling in the slow cooker make a great filling for tamales, enchiladas, tacos and burritos. This is a zesty and rich shredded pork mixture made with pork shoulder and spices and cooked in the slow cooker all day. The smell is heavenly.

  1. Mix together salt, garlic powder, cumin, oregano, coriander, and cinnamon in a bowl. Coat pork with the spice mixture. Sear on all sides in slow cooker until browned. Place the bay leaves in the bottom of a slow cooker and place the pork on top. Pour the chicken broth around the sides of the pork, being careful not to rinse off the spice mixture.
  2. Cover and cook on Low until the pork shreds easily with a fork, about 10 hours. When the pork is tender, remove from slow cooker, and shred with two forks. Return to slow cooker in broth mixture on warm while serving. Serve with warmed taco size flour tortillas, guacamole, queso fresco, monterey jack cheese (for kids), diced roma tomatoes, cilantro, and thinly sliced radishes. Serve with lime wedges.
