A gluten free banana chocolate chip muffin that is moist AND easy to make. No weird ingredients needed. Just Gluten Free Bisquick (available at my local grocery store here in NC) and ingredients I always have on hand.
Preheat oven to 375 degrees F (190 degrees C). Lightly grease 12 muffin cups, or line with muffin papers.
In a large bowl, mix together Gluten Free Bisquick and chocolate chips. In another bowl, stir together bananas, sugar, egg, vanilla, applesauce and melted butter. Stir the banana mixture into the flour mixture. Spoon batter into prepared muffin cups.
