  1. Preheat oven to 375 degrees F (200 degrees C).
  2. Grease 12 muffin cups.
  3. Whisk eggs, brown sugar, vegetable oil, and milk together in a bowl until smooth.
  4. Stir flour, oatmeal, baking powder, baking soda, and salt into wet ingredients to form a batter. Fill the prepared muffin cups with batter.
  5. Bake in preheated oven until tops are golden brown and an inserted toothpick comes out clean, about 22 minutes.

Made some changes-one by mistake! I used room temperature eggs-always when I bake, buttermilk instead of regular milk--which I accidentally used 1 cup instead of 1/2 cup, added vanilla, cinnamon...
