Stir-Fry Pork with Ginger

  1. In a bowl, combine 1/2 cup chicken stock, 2 tablespoons soy sauce, 2 tablespoons white sugar and 2 tablespoons cornstarch and whisk until smooth; set aside. Heat oil in a large skillet or wok over medium-high heat. Fry half of garlic, green onion and ginger in hot oil until fragrant; add pork and cook until no longer pink and cooked through. Remove ingredients to a bowl. Heat remaining oil and fry remaining garlic, ginger and green onion until fragrant. Add cabbage and onions and remaining 1/2 cup chicken stock. Cover and cook for 2 - 3 minutes. Add red pepper slices, sugar snap peas and cornstarch sauce, stir to coat all meat and vegetables until sauce is thick. Serve with rice noodles or rice.
